Utter yumminess!
I'm still a weight watcher.
I know I haven't posted about it in a while, but it's still going on (and some days it goes better than others.) As a whole I really like the program and can see it as something I can stick with long-term.
Especially when I find recipes like this...
(Note: I don't do many things well, but baking cookies is one of them. Frankly, cookie baking and sleeping are my two greatest gifts, but when I made these for our office staff meeting yesterday I wasn't sure if they would taste like diet cookies. Well, let me just say: they don't!)
Enjoy!
1 2/3 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/3 cup butter, softened
1 cup packed light brown sugar
1 large egg
2 teaspoons vanilla
4 ounces dark chocolate coarsely chopped
1/4 cups walnuts chopped and toasted
cooking spray.
Preheat oven to 350. Combine flour, baking soda, and salt.
In a separate bowl, beat butter until fluffy. Add brown sugar. Add egg and vanilla, beating until barely blended.
Gradually add flour mixture to sugar mixture. Fold in chocolate and walnuts.
Spray cookie sheets with cooking spray and spoon batter by rounded teaspoons two inches apart.
Bake for 8-10 minutes (remove while still puffy).
(According to the recipe it's supposed to make four dozen, but I made TINY cookies and just got three dozen, so go figure.)
Anyway, they're very tasty and simple and just about 60 calories each!

Those cookies are uber delicious!! Are you doing any book signing when ur book comes out? U should because i want to meet you. I only know 1 other author and she is a joke writer, and it sounds (by the way u write) that you 2 would get along.
ooo, thanks!I absolutely LOVE baking (almost as much as reading!) and i'm always on the search for great recipes. 60 calories per cookie, seriously? ummm, what on earth could be better than that! definately have to give that recipe a try :)
